Gazpacho with Shrimp

Hey Y'all!

I'm here to tell you about something super yummy that I've eaten a few times now.  

Gazpacho! 


 It's the easiest thing to make if you have no time to cook and you have an easily cleaned food blender or processor.  I say easily cleaned because my last food processor was a pain to clean, most of the time I was too lazy to deal with it and just went with out.  However, on Black Friday my Mother-In-law always tells me to pick something up for myself when I'm out.  This year I grabbed a Ninja from Target for around $20!  It is seriously always out on my counter.  (I use it daily to make the skinny strawberry whip that I shared with you previously!)

It's just like this but without the medium sized blender.  
So it you have one of those or a similar product (Bullet blender?) this recipe will be super easy for you.

For two people or a if you want leftover portion:I made 8oz of shrimp, cooked on the stove in water, sea salt and garlic. 


Don't forget to weigh! 
Gazpacho: 
2.5oz of cucumber, peeled and seeded. 
5 oz of seeded tomatoes 
2 small cloves of garlic
.5 oz of onions 
A few leaves of fresh basil and cilantro 
Sea salt to taste 

Water



I blend it all together in my ninja.  I just eye ball the water depending on how soupy I want it.

Enjoy!

You could also eat this with Crab, Chicken, or Ground-beef seasoned with Taco Spices!

Basil & Thyme Radishes

Hey y'all!

Okay so, never have I ever really eaten radishes.  I've had a few raw ones in a salad before but I wasn't the one that put them there.  Last week I went shopping with my Momma.  She was on the search for them and when we found them I grabbed a bag too.  Crap, what do you do with radishes!  

So, after some time on Pinterest and some recipe rewriting (no butter or oil, thank you very much)  I came up with these.  I'm pretty sure that when god made radishes, this is how he intended on us eating them.


Basil & Thyme Radishes 

4 oz of Radishes
Water
1 tsp Thyme Powder
A few fresh Basil Leaves, sliced into slivers 

Wash, Measure, & Quarter your radishes.

Add all ingredients to pan over medium heat.  Bring to simmer and cover.  

After only a few minutes make sure to stir and check you water to prevent sticking. 

It should only take about 5 minutes for the radishes to become tender.  

I like to let the water cook off and stir them around the pan a little to add some color.  

Be careful not to let them stick.

Serve and enjoy!

Skinny Strawberry Whip

Hey Y'all!


Let me tell you a story about a woman and her ice cream.  There once was a woman that loved ice cream, she loved it so much in fact that she ate it everyday until she got fat and had to go on a diet.  Are you guessing that this woman is me?  *DING DING DING* You're the winner!

When my mom first started talking to me about eating on Omni I wanted to laugh in her face.  Actually, I'm pretty sure that I did laugh in her face.  Even when I tried Jenny C I got to eat ice cream!  Heck, that's how they suck you in on their commercials, "And you get to eat ice cream!" 

I was on the verge of plotting an uprising before I tried this Skinny Strawberry Whip.  I've been making it everyday to eat after dinner.  I've even made it for breakfast! 

Skinny Strawberry Whip


Grab your handy Food blender and throw in one of your fruit servings. 
6-9 strawberries (depending on size)

Add on dropper of Sweet Leaf Vanilla Stevia

As always I eye ball my water, start with a little then keep adding depending on your desired thickness.

Then blend and eat!  Yep, it was seriously that simple!

It's Independence Day!

Hey Y'all!

Just wanted to send out a quick little note that I hope everyone had a fun and safe holiday! 

I spent the day with my girls in the kiddie pool and then at the lake with my family.  

There are lots of people in my Omni Tribe that are loading today.  I really wish I were too but hey, at least I look 10 lbs better today!

I just ate Hamburgers!

Hey y'all!

Yep, that title is right.  I just at p2 hamburgers!  


Mini Hamburgers

1 lb Lean Ground Beef 
Braggs Seasoning (ok, isn't this just like the best stuff EVER!)
Romaine Lettuce Leafs 
Onions
Tomatoes
P2 Ketchup
Mustard

Mix together Lean Ground Beef and a few tablespoons of Braggs.  Put in airtight container and refrigerate at least 30 minutes.  

Measure and weigh out 4 1oz balls of ground beef (an ice cream scoop worker great for this) for you to eat.  Then either continue to make more for your self to eat later or just make regular size patties for the no dieting people you live with.  I did both, eight for me, three for you.

While your patties are cooking (I made mine on a George Foreman grill) measure out your lettuce and tomatoes on your trusty scale and add into account that your eating tomato paste ketchup.  (I'll add that recipe later)

Assemble and enjoy!

Day 2

Hey Y'all!


Day 2 has come and gone and I get to file another day in the success category.  

Down 3.8 lbs!  8.6 lbs in 2 days!
I lost 3.8 lbs!  That makes a total of 8.6 lbs in 2 days!  

It would be nice to say that yesterday was all flowers and butterflies but that would be a lie.  That's just how my life goes.  I had a small headache around noon that I'm guessing was from cutting sugar or maybe soft drinks, both?  Nothing a few Tylenol couldn't take care of.  I also spent 2 unplanned hours at the emergency vet in town.  Long story short, my dog has pneumonia and got put back on heart meds ...$475 later!  Talk about wanting so wash that debit card swipe down with some chocolate, the struggle was real!  However, I called my mom and got some support and powered through it.  Then I turned the radio up and listened to Fight Song by Rachel Platten.  I'm pretty sure it's become my anthem.  Every time I listen to it my resolve grows because I've still got a lot of fight left in me.  





Crispy Apple Chips

I'm not the biggest Apple fan, at my currently state of health you probably wouldn't have guessed that right?!?!  However, these Crispy Apple Chips are super easy and right up my alley.  I am a sucker for a crunchy snack and sweets, this recipe satisfies both of those cravings.

My mom let me borrow her mandolin and I used it to slice 1 medium Apple as thinly as possible.

Then I used parchment paper to line my baking sheet and lined my slices up on it. Then you simply sprinkle with Stevia and add a dusting of Cinnamon.   


Then bake at 250 for 1 hour.  I ended up using two pans for all of the slices. 

They make your house smell wonderful and taste great!  My 5 year old liked them so much I made her a batch too.
